Smoked Mackerel Salad
A salad with substance!
So easy to assemble and well balanced too.
4 new potatoes
2 little gem lettuces (rip them, chop or finely shred its up to you)
2 smoked mackerel filets
4 beetroot (1 vacuum pack)
2 tbsp pumpkin and sunflower seeds
2 tbsp greek yoghurt
2 tbsp horseradish sauce
sea salt and black pepper
Boil the new potatoes in salted water for 15 minutes
Remove the skin and break the mackerel pieces into bite-size chunks
Chop the beetroot into wedges.
Toast the seeds in a dry frying pan.
Combine the yoghurt and horseradish sauce.
Now you are ready to assemble your salad.
Season and serve!
