A fresh gluten free lunch idea helping you get extra veg into your diet.
180g pack of cooked prawns
12 sheets of round rice paper
Handful of coriander
Handful of mint
2 spring onions
1 little gem lettuce
1 tbsp sesame seeds
Roughly chop the herbs, spring onions, lettuce and slice the carrots and cucumber into thin strips.
Briefly soak the rice paper wrappers in water until they are soft and translucent.
Sprinkle wrappers with sesame seeds and lay the veg, prawns and herbs in the centre of each wrapper.
Fold bottom of wrapper up similar to a fajita/ burrito, then pull and fold in the sides to make a tight (ish) roll.
Dip into your favourite chilli sauce, make your own peanut dip or simply use tamari sauce for a true gluten free version.
